Can I block a whole day for one piece?

Yes. Set the service to its real length, for example 4 or 6 hours, and your link only shows times when the whole session fits.

Can I accept every booking myself?

Yes. Online bookings can arrive as requests, which you accept before they appear in the calendar.

What about a client who doesn't show up?

On Premium you can set a no-show fee. It is added to the client's next booking.

Can I offer separate consultations?

Yes. A consultation is its own service, with its own length and price, for example 30 minutes, free.
